In Hindi, Little Millet is more commonly known as Moraiyo or Sama or Sava. It is a good source of calcium, protein and amino acids and is rich in iron, magnesium and vitamins. It is mostly remembered as a “fasting” food during certain Hindu festivals, but it is important to be included in our daily meals for the numerous benefits it offers.

1 cup little millet
5-6 medium size tomatoes, chopped
1 tbsp salt
TEMPERING
Sesame oil/ or any oil
Hing/ asafoteida
Mustard seeds, few fenugreek seeds
1 roasted chana dal/ bengal gram dal
3 tbsp peanuts
2 dried red chillies
Curry leaves
1 /2 tsp turmeric and red chilli powder
Directions:

- Heat oil. Use a pressure cooker, if you can, it will save on cooking time. Add mustard seeds. When they splutter add fenugreek seeds, roasted chana dal, peanuts, and dried red chilli. Add curry leaves, make it crispy.
- Now add turmeric and red chilli powder. Add chopped tomatoes, salt and the washed, drained millets. Pour in 2 cups of water & bring to a boil. Cover the lid of the cooker. Give one whistle and reduce gas to sim for 3 minutes and turn off. The millets will cook in the steam. Check if not cooked, then keep it further.
- If not using a cooker, cook them in a pan and check for water if needed.
- Open the cooker, fluff it up and transfer to a casserole to keep it warm.
