Salsa

Salsa is the Spanish word for "sauce". Salsa can be traced back to the Inca empire (South American Indians), the Mayans, and the Aztecs.



Ingredients

6 red & ripe tomatoes

1 bunch of fresh coriander

1 onion

2 green chillies

1 clove of garlic

1 or 2 lemons

Olive oil

Directions:

  1. Finely chop the tomatoes and coriander (with the stalks) and place them into a large bowl.
  2. Peel and finely chop the onion, deseed and finely chop the chilies, then add into the bowl. Peel and finely grate in the garlic.
  3. Squeeze in the juice from 1 lemon, add 2 tablespoons of olive oil, and mix well. Season to taste with salt, black pepper, and more lime juice, if needed. Cover and set aside for a few hours to let all those flavors develop.
