Kimchi salad is a traditional Korean side dish made with Chinese cabbage or napa cabbage, radish and carrots mixed with chilli sauce, honey, vinegar and later fermented to make a delicious condiment.
Ingredients
500 g cabbage
1/2 cup vinegar
2 teaspoon red chili powder
1-inch ginger
2 tablespoon virgin olive oil
Black pepper as required
1/4 cup green onion
8 cloves garlic
2 teaspoon soy sauce
1 1/2 teaspoon powdered sugar (optional)
Salt as required
Directions:
- Chop and shred all the veggies: shred the cabbage finely, chop the green onions along with garlic cloves, and ginger finely as well. Add the onions and cabbage in a large bowl.
- Prepare the dressing: Take a bowl and add vinegar, red chili powder, soy sauce, and powdered sugar (if using). Mix it well and then transfer this in a blender jar and blend well. Now, add the chopped garlic, ginger along with olive oil in the blender. Blend it on high speed and add salt along with black pepper in it. Blend it again.
- Pour this dressing over the shredded cabbage and onions, and toss to combine well. Make sure that all vegetables are evenly coated with the dressing. Now, using a cling film, cover it and place the bowl in the fridge. Serve it chilled to enjoy!
