Green ingredients like basil and lemon leaves are added in the paste to enhance the color of the green paste.
Ingredients
6-7 green chillies
1 cup fresh basil leaves of ½ cup chopped coriander leaves and stems
2-3 lemon leaves
½ onion, chopped
1 tbsp chopped garlic
½- inch piece of ginger, chopped
1 stick lemongrass (only the lower part), cut into small pieces (or use the rind of 1 lemon)
½ tsp salt
1 tsp peppercorns
1 tbsp lemon juice
1 tbsp coriander seeds
1 tsp cumin seeds
Directions:
- Deseed green chilies and chop them.
- In a pan, dry roast cumin and coriander seeds on low heat for about 2 minutes till they become fragrant and roasted but not browned.
- Put all the ingredients of the curry paste and the roasted seeds in a grinder and grind to a fine paste, using a little water as required.
