Healthy pancakes

Whole-wheat flour, like all whole grains, is a good source of carbohydrates and will help you be alert and keep you in a good mood throughout the morning. It is also a good source of fiber which will boost satiety and keep you full for longer.



Ingredients

1 cup whole wheat flour

½ cup oats

¼ tsp salt

2 tsp baking powder

1 tsp cinnamon

2 egg whites/ or full

1 cup milk of your choice

1 ripe banana

1 spoon cocoa powder

½ cup thick yogurt

1 tsp vanilla essence

Directions:

  1. DRY MIX: Toss flour, oats, baking powder and cinnamon
  2. WET MIX: In another bowl mix egg and milk and whisk. Then add yogurt, banana, coco, vanilla to the mix.
  3. Add the dry mix to the wet mix and stir it to combine all the ingredients. Let it sit for 15 minutes.
  4. Spread some ghee or butter on a non-stick pan. Make small pancakes (not like dosa).
  5. Top it with honey and have fun!


Tips:

You can replace 1 egg with either

  • 1/4 cup mashed banana (very ripe bananas will increase sweetness so be cautious) or
  • 1 teaspoon baking soda + 1 tablespoon vinegar. Combine separately, then add to recipe for fluffier pancakes.
