Healthy ragi cupcakes

Ingredients

1/2 cup + 1/8 cup ragi flour

1 tablespoon flax seeds

1/8 cup cocoa powder

3/4 cup water

1/4 cup oil

1 teaspoon vanilla extract

1/4 cup grated jaggery

1/4 teaspoon baking soda

3/4 teaspoon baking powder

pinch of salt

1 egg (optional)

dark chocolate pieces (optional)

Directions:

  1. In a pan, combine Ragi flour, ground flax seeds, cocoa powder and water. Cook over medium flame.
  2. Transfer to a mixing bowl and allow it to cool. Add oil, egg, vanilla extract, ragi flour, cane sugar or grated jaggery, baking powder, baking soda, a pinch of salt and dark chocolate pieces. Mix well.
  3. Preheat oven to 180 Deg C. Transfer the batter to the cupcake molds lined with parchment paper. Bake for 20 minutes or until a toothpick inserted into a cupcake comes out clean. Cool in pans on wire rack 5 minutes. Remove from pans; cool completely.
