Oats are rich in antioxidants and contain high- soluble fiber. They are a good source of protein, carbohydrates and essential fats.
Ingredients
- 2 cups oats, roasted and powdered
- ½ cup rawa (semolina)
- 1 cup dahi
- 1 cup grated carrot
- ¼ cup coriander, chopped
- ½ tsp turmeric powder
- 1½ green chilli, finely chopped
- ½ tsp fruit salt (ENO)
- Water (adjust according to consistency)
- ½ tsp rai (mustard seeds)
- ½ tsp urad dal
- ½ tsp chana dal
- 4-5 curry leaves, sliced
Directions:
- Combine ingredients 1-7 in a large bowl and mix well. Let the batter rest for 5-10 mins.
- For tempering, add 1 ½ tsp coconut oil to a small non-stick pan and heat it. Add rai, urad dal, chana dal and curry leaves. Let it crackle for a minute and add it to the batter. Mix well and let the batter rest for another 5-10 mins.
- Place the idli steamer with water on medium-high flame and let it come to a boil. While the water is boiling, grease the idli plate with oil and add the batter to the plate. Place the plate in the idli steamer and let it cook for 10 mins. Switch off the stove, allow the idlis to cool for 5 mins before you remove them. Serve hot with mint chutney.
Tips:
If you don’t want to use ENO you can substitute it with homemade fruit salt. To make ½ tsp fruit salt, combine 1/2 tsp baking soda and 1 tbsp lemon juice.
