Orange, almond, chicken and cabbage bowls

Oranges are a healthy source of fiber, vitamin C, thiamine, folate, and antioxidants. Vitamin C in oranges helps your body in a lot of ways, one of it is to help your body make collagen, a protein that heals wounds.



Ingredients

2 oranges

3 cups shredded coleslaw mix (shredded green cabbage + finely sliced carrots)

1 cup shredded boneless chicken breast, boiled (boil the chicken in a pressure cooker with little water, ginger-garlic paste, salt, and pepper)

3 tablespoons toasted sliced almonds

2 green onions, thinly diagonally sliced

3 tablespoons sesame-ginger salad dressing

For the salad dressing:

In a jar, combine

2 tablespoons light soy sauce

1/2 cup vegetable oil

3 tablespoons rice wine or apple cider vinegar

1 tablespoon sesame oil

1 tablespoon fresh lime juice

1 clove garlic minced

3 tablespoons honey

1 tablespoon fresh ginger grated

2 tablespoons water

Directions:

  1. Peel and section the oranges over a bowl; reserve sections. Squeeze membranes over the bowl. Discard membranes.
  2. Divide orange sections, coleslaw mix, chicken, almonds, and green onions between 2 shallow bowls.
  3. Drizzle dressing evenly over each serving.
