Yellow curry paste

Turmeric is the vital ingredient that gives yellow Thai curry its color.



Ingredients

3 tbsp chopped fresh yellow or red chili or 4-5 dried red chilies

1 stick lemongrass (use the bottom part)

½ onion

1 tbsp garlic

½ inch ginger

1 tbsp lemon juice

1 tsp salt

3 tsp turmeric

Spices to roast

1-1/2 tsp coriander seeds

¼ tsp peppercorn

1 star anise

1 tsp fennel seeds

2 cloves

1-inch stick cinnamon

Directions:

  1. Put all spices in a pan and dry roast 2-3 minutes till fragrant, let them cool and crush roughly
  2. Put all ingredients in a grinder and add roughly crushed spices. Grind to a paste. Use 2 tbsp water, if required.
  3. Your yellow curry paste is ready. You can use it to make Thai Yellow Curry.
