Cinnamon comes from the inner bark of a small evergreen tree. The bark is peeled and laid in the sun to dry, where it curls up into rolls known as cinnamon sticks. Cinnamon contains Cinnamaldehyde, an essential oil found in the bark that gives cinnamon its distinctive aroma and flavour and is also responsible for the antiviral, antibacterial and antifungal properties of the spice.

1 tbsp of ground cinnamon
