Double tomato bruschetta

This bruschetta is refreshing and light. It packs a solid garlic punch, with bursts of flavour explosions from the basil.



Ingredients

  • 1 baguette, cut into rounds
  • 1½ cup cherry tomatoes, cut into quarters
  • ½ cup fresh basil leaves, thinly sliced or dried powder
  • ¼ cup sun-dried tomatoes, roughly chopped (or substitute with fresh tomatoes)
  • ½ tbsp capers, finely chopped (optional or you can use chopped green olives instead)
  • 2 cloves garlic, minced
  • 1 tsp onion powder
  • 1 tsp oil from the sun-dried tomato jar (or substitute with olive oil)
  • ¼ tsp salt
  • ¼ tsp ground black pepper
  • ½ cup (120 mL) balsamic vinegar

Directions:

  1. Combine the chopped tomatoes, basil, sun-dried tomatoes, capers, garlic, onion powder, salt, and pepper in a bowl.
  2. Mix to combine and set aside to allow the flavors to meld.
  3. Put on toasted bread and enjoy!
