Beetroot is loaded with all essential nutrients, high in fiber and is rich in folate. It is a powerful nutritive vegetable with antioxidant, anti-inflammatory and detoxifying properties that make you look and feel good inside out. The antioxidants and vitamins found in amla berries also offer several health benefits such as high concentrations of vitamin C in amla helps the body recover from illness. Amla, though quite sour on their own, their flavor can enhance recipes they’re added to.
Ingredients
1 big or 2 medium sized tomatoes
2 amlas (Indian gooseberry)
1 medium beetroot or 1/2 large beetroot
Around 200 g (bottle gourd/pumpkin/carrot/sweet potato)
12-15 spinach leaves
6-7 cloves garlic
1-inch ginger
2-inch raw turmeric (optional)
Coriander or mint leaves to garnish
4 cups water
Rock salt to taste
Black/white pepper for seasoning
1 tsp olive oil
1 tsp fresh lemon juice (optional)
Directions:
- Wash all the veggies nicely and steam or boil them.
- Once all the veggies are steamed, allow them to cool.
- Mash all with the help of a potato masher and you may need to grate steamed ginger and raw turmeric.
- Mix them all and pass it through a sieve.
- Bring it to a boil, add rock salt and pepper.
- Serve hot with a small drizzle of olive oil on top. You can even add a few drops of fresh lemon juice.
- Garnish with any fresh herbs available.
