Green beans are a very versatile legume and contain many essential vitamins and minerals, mainly vitamins C, A, and folate. You can find them fresh in the produce aisle, in the freezer section, or even in cans.
Here we have shared a simple stir fry recipe you can whip up easily and one that goes well as a side with any lunch or dinner.



Ingredients

  • Green beans (French beans)- 250 g, trimmed, halved, washed under running tap water
  • Spring onion- 2 chopped scallions (or you can use 1/2, finely sliced onion)
  • Peanut oil (or you can use olive oil)- 2 tbsp
  • Ginger- garlic paste- 1 tbsp
  • Salt, to taste
  • Red dried chilies- 2-3 nos.
  • Peanuts- handful, roughly chopped
  • Sugar- ½ tsp
  • Asian chili-garlic sauce (you can use any chili sauce or soya sauce)- 1 tsp

Directions:

  1. Saute green beans in 1 tbsp peanut oil over high heat until browned, 5 to 6 minutes; remove.
  2. In the same pan, add 1 tbsp peanut oil, ginger garlic paste, dried chilies, and chopped peanuts; cook 30 seconds.
  3. Add the green beans, scallions and 1 teaspoon each sugar and sauce; toss to coat.
  4. Season with salt and pepper.
