Ingredients
Homemade hummus
Leftovers, if any (e.g. chicken or steak)
1 egg
1 chapati
Tomatoes, chopped
Cucumber, chopped
Directions:
- Dice any leftovers from the night’s meal and add it to a scrambled egg.
- To a chapati, spread a generous spoonful of hummus along with salsa/mint chutney if available.
- Add the scrambled egg and top it up with fresh tomatoes and cucumber.
Tips:
For a vegetarian burrito, add lettuce or other salad greens and skip the egg.
