Hummus is a Middle Eastern dip typically made from chickpeas. Not only is it delicious, but it is also versatile & packed with plant-based protein.



Ingredients

Homemade hummus

Leftovers, if any (e.g. chicken or steak)

1 egg

1 chapati

Tomatoes, chopped

Cucumber, chopped

Directions:

  1. Dice any leftovers from the night’s meal and add it to a scrambled egg.
  2. To a chapati, spread a generous spoonful of hummus along with salsa/mint chutney if available.
  3. Add the scrambled egg and top it up with fresh tomatoes and cucumber.


Tips:

For a vegetarian burrito, add lettuce or other salad greens and skip the egg.
