Ingredients
1/4 cup maple syrup (or honey)
1/4 cup peanut butter or almond butter
1/2 cup unsalted almonds (loosely chopped)
1 1/2 cups oats
Other additions: ¼ cup chocolate chips, ¼ pumpkin seeds, and ¼ cup cranberries (you can use any other dried fruit, nuts or seeds of your choice)
Directions:
- Toast oats, chopped almonds, and sunflower seeds in a 350-degree F (180 C) oven or on the stovetop in a large bottomed non-stick pan for 10 minutes. Stir occasionally.
- In a large mixing bowl, add the other ingredients (I have taken chocolate chips and cranberries.) and after 10 minutes, transfer the oats mixture to this bowl.
- Warm maple syrup (or honey) and nut butter of your choice in a small saucepan over low heat. Stir and pour this into the mixing bowl and then mix.
- Once thoroughly mixed, your granola is now ready and it can be stored in an airtight container. To make them into bars, transfer them to a square or rectangle baking dish lined with parchment paper.
- Press down firmly to pack the bars, which helps them hold together better.
- Cover with cling wrap, and let firm up in the fridge for 30 minutes.
- Remove bars from pan and chop into 10 even bars. Store in an airtight container for up to a few days.
