Ingredients

1/4 cup maple syrup (or honey)

1/4 cup peanut butter or almond butter

1/2 cup unsalted almonds (loosely chopped) 

1 1/2 cups oats

Other additions: ¼ cup chocolate chips, ¼ pumpkin seeds, and ¼ cup cranberries (you can use any other dried fruit, nuts or seeds of your choice)

Directions:

  1. Toast oats, chopped almonds, and sunflower seeds in a 350-degree F (180 C) oven or on the stovetop in a large bottomed non-stick pan for 10 minutes. Stir occasionally. 
  2. In a large mixing bowl, add the other ingredients (I have taken chocolate chips and cranberries.) and after 10 minutes, transfer the oats mixture to this bowl.
  3. Warm maple syrup (or honey) and nut butter of your choice in a small saucepan over low heat. Stir and pour this into the mixing bowl and then mix.
  4. Once thoroughly mixed, your granola is now ready and it can be stored in an airtight container. To make them into bars, transfer them to a square or rectangle baking dish lined with parchment paper. 
  5. Press down firmly to pack the bars, which helps them hold together better.
  6. Cover with cling wrap, and let firm up in the fridge for 30 minutes.
  7. Remove bars from pan and chop into 10 even bars. Store in an airtight container for up to a few days.
