Happy lentil salad (Tabbouleh)

Tabbouleh is a simple Mediterranean salad made by tossing together veggies like tomatoes and onions with herbs and lemon juice. Our Happy Lentil Salad is similar to a Tabbouleh to which we have added green lentils (or green chilka dal). Lentils are an excellent source of B vitamins, iron, magnesium, potassium and zinc. They’re also a great source of plant-based protein and fiber.



Ingredients

1 cup / 200g dried green lentils (or other lentils)

Vegetable or chicken stock (you can use fresh stock if you have, or use water + 1 bouillon cube, crumbled)

1 bunch of spring onions

200 g ripe cherry (or regular) tomatoes

1 large bunch of fresh flat-leaf parsley

1 large bunch of fresh mint

extra virgin olive oil

1 lemon

1 large garlic clove, chopped

Salt and pepper

Directions:

  1. Rinse the lentils, then cook in plenty of water (with stock) until tender. Drain and set aside to cool.
  2. Trim and finely slice the spring onions, halve the tomatoes, then pick and finely chop the herb leaves.
  3. Mix the cooled lentils with the spring onions, tomatoes, garlic, herbs and 4 tablespoons of oil. Add the lemon juice to taste, season with salt and black pepper, then serve.
