Tabbouleh is a simple Mediterranean salad made by tossing together veggies like tomatoes and onions with herbs and lemon juice. Our Happy Lentil Salad is similar to a Tabbouleh to which we have added green lentils (or green chilka dal). Lentils are an excellent source of B vitamins, iron, magnesium, potassium and zinc. They’re also a great source of plant-based protein and fiber.
Ingredients
1 cup / 200g dried green lentils (or other lentils)
Vegetable or chicken stock (you can use fresh stock if you have, or use water + 1 bouillon cube, crumbled)
1 bunch of spring onions
200 g ripe cherry (or regular) tomatoes
1 large bunch of fresh flat-leaf parsley
1 large bunch of fresh mint
extra virgin olive oil
1 lemon
1 large garlic clove, chopped
Salt and pepper
Directions:
- Rinse the lentils, then cook in plenty of water (with stock) until tender. Drain and set aside to cool.
- Trim and finely slice the spring onions, halve the tomatoes, then pick and finely chop the herb leaves.
- Mix the cooled lentils with the spring onions, tomatoes, garlic, herbs and 4 tablespoons of oil. Add the lemon juice to taste, season with salt and black pepper, then serve.
