Seed and nut mix (chiwda)

A homemade trail mix which is super easy to whip up!
You can have it as a savory granola mix on your breakfast oats or add it as a crunchy delicious topping on your bowl of yoghurt/ dahi or even a salad.



Ingredients

1 cup hulled raw pumpkin seeds
1 cup hemp seeds
1/2 cup raisins
1/2 cup coconut flakes
1/4 cup sesame seeds
15-20 fresh curry leaves
1/2 cup cashew nuts
1/2 cup almonds

FOR THE SEASONING

1 Tablespoon oil
1/2 teaspoon turmeric powder
1/2 teaspoon red chili powder
1 teaspoon fennel seeds
2 tablespoon lemon or lime juice
Salt per taste

Directions:

  1. Warm up the oil in a pan. Add curry leaves. They will start to sizzle and crisp up in a few minutes.
  2. Add fennel seeds, sesame seeds and raisins. Keep stirring on low flame for 5 minutes so everything toasts up and the raisins swell and puff up.
  3. Then add turmeric powder, red chili powder and lemon or lime juice. Mix well. Add rest of the ingredients and mix well again.
  4. Continue to stir for 8-10 minutes on low heat.
  5. Turn off the heat and let the mixture cool down completely.
  6. Transfer the mix to an air-tight container and enjoy it as a snack anytime you want!


Tips:

  • You can store the mix in an air-tight container for upto 2 weeks.
  • Make sure you make this recipe on low to medium flame since the ingredients can burn quickly.
  • Always keep stirring, to allow the ingredients to roast nicely.
