Rajma, Quinoa, Veggie Salad

This colorful salad is a great way to consume power-packed ingredients like quinoa, rajma beans and veggies. The different ingredients give the recipe different colours and various textures, and the dressing, which combines orange juice with honey, herbs, and spices gives the recipe such a burst of flavor!

It is a great salad to have on a party menu.



Ingredients

1 cup soaked and boiled rajma beans

1 cup cooked quinoa (you can check the recipe for How To Cook Quinoa here)

1/2 cup chopped onions

1/2 cup chopped red capsicum

1/2 cup orange segments

2 tbsp chopped coriander leaves

 

For the dressing

1/4 cup olive oil

1 tsp lemon juice

1/2 cup readymade orange juice (optional)

1/2 tsp dried mixed herbs

1 tsp honey

Salt and to taste

 

Directions:

Mix all the ingredients with the dressing in a deep bowl and toss well before serving!
