This bruschetta is refreshing and light. It packs a solid garlic punch, with bursts of flavour explosions from the basil.
Ingredients
- 1 baguette, cut into rounds
- 1½ cup cherry tomatoes, cut into quarters
- ½ cup fresh basil leaves, thinly sliced or dried powder
- ¼ cup sun-dried tomatoes, roughly chopped (or substitute with fresh tomatoes)
- ½ tbsp capers, finely chopped (optional or you can use chopped green olives instead)
- 2 cloves garlic, minced
- 1 tsp onion powder
- 1 tsp oil from the sun-dried tomato jar (or substitute with olive oil)
- ¼ tsp salt
- ¼ tsp ground black pepper
- ½ cup (120 mL) balsamic vinegar
Directions:
- Combine the chopped tomatoes, basil, sun-dried tomatoes, capers, garlic, onion powder, salt, and pepper in a bowl.
- Mix to combine and set aside to allow the flavors to meld.
- Put on toasted bread and enjoy!
